Vegan Bolognese
After being shuttered for months due to the COVID-19 pandemic, The Bobby Hotel's signature restaurant Tavern at Bobby has officially reopened its doors to the public—and not without a few changes.
Spearheading those changes is new executive chef, Jorge Gonzalez. With over 15 years of experience in the food and beverage industry, Gonzalez has worked with some of the best chefs in the business. In his new role, Chef Jorge looks forward to showcasing cuisine that mirrors his passion for global flavors and innovative culinary technique from some of his favorite regions including the southwest, Hawaii, Mexico, and Peru
Since joining the Tavern at Bobby team, Chef Jorge has been hard at work developing revamped menus for the restaurant. On the food menu, guests can look forward to standout dishes like Crab Fried Rice, Hamachi Crudo, Lamb Meatballs, and Braised Spaetzle. An entirely vegetarian-focused menu will also complement the standard fall menu with dishes such as Mango & Tajin, Mushroom & Cauliflower Bolognese, and Red Curry Lentils.

Last but certainly not least is the new cocktail menu that features an array of refreshing and unique libations including the Something to Cheers made with Cava, Cocchi Americano, triple sec, and bitters, and The Church Street Sundown crafted with Castle & Key Gin, Aperol, sweet vermouth, lemon, and blood orange.
