The Catbird Seat has announced Chef Brian Baxter as the executive chef for the fifth iteration of the restaurant.
“We’ve had the pleasure of knowing Brian for several years now,” said Max Goldberg of Strategic Hospitality. “Since opening The Catbird Seat in 2011, it was our vision to create a platform in which chefs can express themselves with no constraints. Besides being an incredibly talented chef and artist, Brian is a great person and leader. We’re truly excited for what he has in store for the restaurant.”
Chef Brian Baxter joined the Strategic Hospitality family back in 2017 as Chef de Cuisine at Josh Habiger's Bastion. Prior to that, Baxter worked under Chef Sean Brock at McCrady's in Charleston as well as Husk Nashville. Most recently, he helped open Cold Beer in Atlanta.
“Sometimes you have to leave something to realize you love it,” said Chef Brian Baxter. “I hoped I would have the opportunity one day to move back to Nashville with my family to be a part of the amazing Nashville restaurant community again.”
Baxter's menu will focus on the seasonality of ingredients, whether local or from other parts of the world. While he plans to support as many local farmers as possible, he will also emphasize incredible products found elsewhere, always the peak of the season.
The Catbird Seat's interior space will once again evolve with the new chef. To mirror Baxter's menu, The Catbird Seat's new space will reflect seasonality with a rotating selection of watercolor paintings by Todd Saal.
