Louisiana Creole cuisine may not be a prevalent part of this city's food scene. But TomKats Hospitality Group, which owns The Southern Steak & Oyster, Acme Feed & Seed, and Saffire, is looking to change that with the Southernaire Market, which opened adjacent to The Southern in March 2015.
Modeled after the bodegas and markets found in cities like New Orleans and New York, Southernaire is 'Creole-inspired,” says TomKats public relations manager Becky Dryden. They offer made-to-order sandwiches and salads for a grab-and-go lunch, a butcher counter with fresh meat and seafood, and shelves of artisanal products from around the region. The Southernaire plans to host a monthly tasting series to showcase the talents of chefs from the TomKats properties, allowing them to partner with local farmers as well as wine and spirit companies.
