Bagelshop’s Harvest Apple Tartine is an autumn must.

“The Harvest Apple Tartine is inspired by our love of all things fall! There’s nothing better than waking up on one of the few crisp mornings we get here in Nashville and really taking in the beautiful weather, when the temperature finally drops below 70 degrees. This is our homage to that feeling,” says owners Kayla and Max Palmer. “We like to keep a tartine on the menu for every season, so we knew that we had to incorporate something that really complements that cozy feeling of putting on your favorite sweater for the first time all year and stepping on crispy leaves.”
Ingredients:
- 1 Bagel of choice (A French toast bagel is best!)
- 1 Red apple (Gala, Fuji, or Red Delicious)
- 1 1⁄2 Tbsp butter
- 1⁄8 Cup brown sugar
- 1⁄4 Tsp cinnamon
- 1 Pinch nutmeg
- 1⁄2 Tsp cornstarch
- 1⁄8 Cup water
- Ricotta cheese
- Chopped pecans
- Maple syrup
- Flaky salt
Directions:
- The recipe starts by making the cinnamon apples. In a pot, melt the butter over medium heat. Once it’s completely melted, add in the apples and stir until they are fully coated in the butter.
- Sauté until nice and tender to your liking. The cook time depends on the thickness of your apples.
- While the apples cook, stir together the cornstarch and water in a small bowl and set aside. Once the apples are tender, take the pan off the heat and immediately stir in the cornstarch slurry.
- Once combined, stir in the brown sugar, cinnamon, and nutmeg.
- For the maple pecans, preheat an oven to 350 degrees. Spread pecans evenly on an oven-safe dish and pour maple syrup over them.
- Place in a preheated oven for 5-7 minutes, being careful not to burn them. Once they are lightly toasted, immediately pull them out and top with flaky salt.
- To assemble the tartine, slice your bagel and toast. Schmear a healthy layer of ricotta on both sides of your bagel and top with your cinnamon apples.
- Add maple pecans atop the cinnamon apples and serve!
