Bagelshop’s New Year, All Year Collaboration with Le Tena
Bagelshop’s New Year, All Year series continues with a special partnership with Abby Gebreegziabher of Le Tena to celebrate the Ethiopian New Year, Enkutatash. Abby partnered with Bagelshop to create the Meskel Flower—a fresh-baked bagel generously topped with nigella seeds, which are pressed into the dough to create a flavorful crust. Once toasted, the bagel is layered with a spread of farmer’s cheese, a spiced butter whipped with warm spices for a tangy, savory depth. It’s finished with a heaping spoonful of Ethiopian-style braised collard greens. This limited offering will be available exclusively at Bagelshop from Wednesday, September 10, through Friday, September 12 from 7 a.m. to 2 p.m.—or until supplies last. A portion of proceeds will be donated to The Nashville Food Project.
The flavors draw inspiration from traditional dishes enjoyed during major Ethiopian holidays, such as doro wot (spicy chicken stew), braised collards, fresh cheese, and homemade bread. Abby’s creation captures the spirit of Ethiopian celebratory cuisine while embracing local ingredients, which remain central to her cooking. By reimagining a few pillars of Ethiopian cuisine in a new way, Abby bridges tradition with local ingredients and food culture—an approach that inspired her New Year, All Year creation
