Kolache meet Nashville. Nashville meet kolache.
The sweet, yeast-based Czech pastry with the tongue-twisting name is finally coming to Music City with the opening of Yeast Nashville. Kolaches, which comprise a meat, cheese or fruit filling, got their start in Central Europe but the pastry's fandom took a surprising detour in Texas after immigrants settled there in the 1800s. Yeast Nashville owners Sara and Bill LaViolette were surprised when they moved from Houston five years ago to find that Nashville hadn't yet caught onto the kolache craze, so they held a soft opening of their own East Nashville bakery in late June. Menu offerings feature a mix of traditional Bohemian and innovative Tex-Czech influences. Be sure to try their popular jalapeño and cheese kolache but know they offer a wide assortment of breads, muffins and sweets, too.
