This May, Bar Roza opened in a historic corner of The Arcade (211 Arcade Alley) in Nashville as the newest concept from Cafe Roze and Roze Pony chef and restaurateur, Julia Jaksic. Co-owned by leading bar mind and Roze beverage director Owen Gibler, Bar Roza intends to provide a respite from the bustle of downtown Nashville; a welcoming, intimate haven for serious cocktails without a hint of pretension.
Guests are first introduced to a section of cocktails called the Astors—compact, flavor-forward drinks designed for sampling. Built as dual-modifier cocktails, like the “Foreseen Friend” with Mt. Rigi and Meletti, they balance elements of aperitif and digestif with thoughtful touches of citrus, phosphate, salt, and bitters. While they maintain the complexity and structure of a full cocktail, the pours are intentionally smaller and lower in alcohol, allowing guests to try multiple options without overindulging. These drinksare designed to deliver maximum impact in a smaller format, pairing seamlessly with Bar Roza’s punchy, shareable dishes like n’duja gougères, mortadella focaccia with Calabrian ricotta and aged SarVecchio parmesan, and Cantabrian anchovies with cultured butter and salsa verde on toasted baguette.
Next up on the beverage menu is the Polythermal Arcade, a section highlighting hot and cold expressions of central ingredients. While both using fresh pressed green apples, the Pimm's Cup shakes lemon, cucumber, ginger and mint into Pimm's; and the Mother's Love steams the juice with maple, lambic, turmeric, cinnamon and black pepper into Laird's Apple Brandy.
The Standard Fare (shaken drinks) and Exit Strategy (stirred) wrap up the cocktail section of the menu with more traditional methods of drinks building. The Pistola is a shaken combination of mezcal, Jamaican rum, lime, carrot and habanero, served up; while the Moonfish is a collection of Ford's Gin and Cocchi Americano stirred with Chareau, Finocchietto and Eucalyptus, then finished with Rosemary, Mintand Palo Santo. Gibler applies a similar philosophy to the N/A beverages, offering a creative range of balanced drinks with depth of flavor and taste.
Every detail, from ice shape to carbonation, herb distillation to oil extraction, is thoughtfully considered and in service of the drink, resulting in subtly elegant cocktails that can be enjoyed effortlessly, without exposition
That same subdued elegance is found throughout Bar Roza, where the focus is on the room, the music and the people who gather within. Its visual identity, conceived by Jaksic, is rooted in the same modernist values and material honesty that guide its cocktails. The space celebrates quality in every detail: the clean, inviting lines, warm veining of marble, and textural depth of surfaces. Even the menu design reflects this approach, with its custom font and nod to the Fibonacci sequence, whose golden ratios serve as a template to the balance of Bar Roza’s Astors cocktails.
