José Andrés Group is excited to introduce two new concepts at W Nashville: Bar Mar and Butterfly, opening on March 23rd. Located within W Nashville in the heart of the Gulch, the two venues bring distinct yet complementary dining and drinking experiences to Music City. Together with Zaytinya, Bar Mar and Butterfly help establish W Nashville as a vibrant culinary destination, offering guests a dynamic range of flavors, settings, and moments to gather.
Bar Mar celebrates the bounty of the sea alongside exceptional meats, drawing inspiration from the coastal cuisines of Spain and beyond. Designed as a lively seafood and steakhouse experience, the restaurant highlights pristine ingredients, bold flavors, and playful culinary techniques that reflect the spirit of Chef José Andrés and his team.
Butterfly offers a completely different perspective, both in atmosphere and setting. Located on the rooftop of W Nashville, the experience begins with an unmistakable energy—an elevated destination where expertly crafted cocktails, vibrant music, and sweeping skyline views set the tone from day to night. With an energetic, social atmosphere and a menu inspired by bright coastal flavors, Butterfly is designed to capture the feeling of celebration and discovery that defines Nashville’s nightlife.
“Nashville is a city full of creativity, energy, and incredible hospitality,” said Chef José Andrés. “With Bar Mar and Butterfly we wanted to create two experiences that complement each other while offering something unique. Bar Mar celebrates the beauty and abundance of the sea, along with great meats, while Butterfly is a place to gather above the city for incredible cocktails, some great tacos and ceviches, and unbeatable views. Together they are about sharing joyful moments around the table and creating spaces where people can come together.”
Bar Mar: Culinary & Design
At Bar Mar, the menu centers around an expansive selection of seafood, raw bar offerings, and premium meats, highlighting the diversity and richness of coastal cuisine, complemented by a dynamic beverage program featuring refined cocktails, Spanish wines, and spirit-forward classics. The experience begins at the raw bar with dishes like Oyster in Ponzu and Live Scallop Ceviche, showcasing bright, citrus-driven flavors and impeccable sourcing, perfectly paired with crisp sparkling selections or refreshing cocktails like the Floral Cloud.
Signature dishes from both land and sea bring together Spanish culinary traditions with contemporary influences. Standouts like the Pluma Ibérica de Bellota Pork, sourced from Spain’s prized acorn-fed pigs, and the classic Grilled Sea Bream highlight the kitchen’s focus on high-quality ingredients and thoughtful preparation. From the land, the True Ribeye Steak from Rosewood, Texas, served with roasted cipollini onions, mushrooms, and rich onion jus, delivers a bold, indulgent expression of premium beef. Meanwhile, dishes like Neptune’s Pillows and the Wagyu “Philly Cheesesteak” offer guests the chance to experience iconic José Andrés bites.
The menu also features the iconic Jamón Ibérico de Bellota, hand-carved from Spain’s celebrated acorn-fed pigs, alongside shareable favorites like the Lobster Roll and vegetable-driven sides such as Sweet Corn Ribs with mahón cheese espuma and lime.
The kitchen is led by Head Chef Carlos Fierro, whose approach emphasizes vibrant flavors, thoughtful technique, and ingredient driven cooking that reflects the spirit and creativity of José Andrés Group.
Bar Mar offers a vibrant yet refined dining room that captures the spirit of a modern coastal restaurant. Designed by Rockwell Group, the 3,845-square-foot space features an open-plan layout that accommodates 178 guests across indoor and outdoor seating, including a private dining room for intimate gatherings. The design blends rich natural woods, metals, stone, and leather to create a layered, welcoming environment that feels both sophisticated and lively. A standout feature of the space is Rockwell Group’s signature octopus chandelier, complemented by custom sconces and soft ambient lighting that enhance the restaurant’s warm glow. A playful art piece by Jeff Scott depicting Elvis alongside his iconic gold phone adds a subtle Nashville nod within the contemporary coastal setting.
Butterfly: Culinary & Design
At Butterfly, the experience begins with energy—an elevated rooftop destination where expertly-crafted cocktails, vibrant music, and sweeping skyline views set the tone from day to night. Rooted in agave spirits, the dynamic beverage program takes center stage, featuring signature sips like José Andrés’ standout Salt Air Margarita, the smoky Oaxacan Negroni, and the bright, tropical Maracuyá. An expansive tequila section anchors the menu, alongside mezcal-forward creations, refreshing citrus-driven cocktails, and a curated lineup of wines, beers, and spirit-free options.
The menu complements the atmosphere with vibrant, coastal Mexican-inspired fare designed for sharing. Guests can graze on ceviches, tacos, tostadas, and small plates that balance bright acidity with bold flavor. Highlights include the Atún Pacífico with ahi tuna, Maggi-lime marinade, and crispy amaranth, and the Ceviche Cítricos with cobia and pineapple-habanero marinade, alongside playful bites like the Tostada de Atún and Quesadilla de Chicharrón. From Baja-style crispy fish to slow-cooked carnitas with avocado salsa verde, the menu is built for relaxed, social dining.
Spanning 6,100 square feet across indoor and outdoor spaces, Butterfly offers a striking rooftop escape designed by Rockwell Group. Inspired by coastal Mexico, the space comes alive through vibrant tile, bold patterns, and playful textures, anchored by an illuminated butterfly sculpture at the entrance—an interactive focal point that invites guests to step into the experience.
With sweeping skyline views and an open-air rooftop setting, Butterfly transitions effortlessly from sunset cocktails to late-night gatherings. As the sun sets, Butterfly evolves into a casual late-night scene where elevated cocktails, beats, and atmosphere take center stage.
