COA, a new rooftop restaurant located atop Canopy by Hilton Nashville in The Gulch, will officially open to the public on Friday, March 6. The venue introduces a Tulum-inspired rooftop experience, bringing a fresh dining and nightlife destination to one of Nashville’s fastest-growing neighborhoods.
Situated at the corner of Division Street and Overton Street, the hotel features nearly 200 guest rooms and suites. Designed by Rafael Berkowitz, Canopy by Hilton opened in summer of 2025 and offers several notable food and beverage concepts for guests and visitors alike, including local favorite 8th & Roast Coffee, a Five Points Pizza window, and Silo, a neighborhood dining staple. COA further expands the hotel’s culinary offerings with a rooftop concept centered on bold Mexican flavors, agave-forward cocktails, and skyline views.
“COA is rooted in vibrant Mexican flavors, but it’s also about creating an experience that feels energetic, approachable, and meant to be shared,” said Jose Mendoza, Executive Chef of COA. “The menu highlights the freshest ingredients while allowing room for creativity, and the rooftop setting really brings everything together, from the food and cocktails to the atmosphere. We wanted COA to feel like a place people come back to, whether it’s for dinner, drinks, or a late night with friends.”
Designed as a year-round rooftop experience, COA features an extensive agave collection and a menu of shareable plates, positioning the space as both a dining destination and a gathering place for locals and visitors alike. The atmosphere is designed to transition seamlessly from dinner to late evening.
“We couldn’t be more excited to provide our guests and visitors with a new rooftop experience in Nashville,” said Tiffany Lombard, Area General Manager of Hilton. “COA is a unique concept here in Nashville, offering one of the city’s most comprehensive agave selections. Whether you’re a tequila enthusiast or simply looking to experience a new rooftop, COA will be a go-to destination for memorable nights out.”
The opening of COA reflects continued hospitality growth in The Gulch, a neighborhood that has become a focal point for hotel development, dining innovation, and experiential concepts in Nashville. With its elevated setting and comprehensive beverage program, COA adds to the area’s expanding roster of destination-driven restaurants.
