June, Sean Brock’s latest tasting-menu-style restaurant above its sister restaurant Audrey, opened its doors on July 13.
As a 20+ course experience, the modern concept offers a unique tasting menu-only format that explores the ingredients indigenous to the American South.
The Experience:
- June is shares products and techniques while seamlessly blending Brock’s culinary connection to Appalachia. The resulting tasting menu is a journey of bites, with each setting the stage in between courses for the next to come. Brock and his team serve five-acts – canapes, water, land, dessert, and petit fours. Plate size is measured by the actual number of bites, and the experience roughly rounds out to two to three hours.
The Lab:
- June’s bites are inspired by its adjacent research and development lab – built with flavor extraction and concentration in mind. When dining at June, guests can watch the chefs create the plate dishes in the open kitchen. The menu will be switched up twice a season to make eight menus a year.
